Cravings =)


Hey There! Sorry it's been a while I was out of town then just a bit busy but finally I am bringing you those last few recipes and picture:
Key Lime cheesecake pops:
For Crust;
1 1/2 cups flour
3/4 cup sugar
1 egg
1/4 cup melted butter
For Filling:
3 pkgs cream cheese
3/4 cup sugar
1 C sour cream
3T flour
3 eggs
1/2 cup key lime juice
1t vanilla
To dip:
1 1/2C dark chocolate
1. Mix ingredients for crust together in medium mixing bowl using a hand mixer, then press into the bottom of a 8x11 pan
2. Bake at 375 for 7 minutes then cool
3. In a large bowl with electric mixer beat cream cheese and sugar until smooth, then add eggs one at a time. Add the remaining ingredients and beat until smooth.
4. Pour over the mostly cooled crust and bake at 375 for 15 minutes ( you can use a water bath if you like, but cracking doesn't really matter with the pops) reduce temperature to 250 and bake until center is just set
5. Cool completely then cut into 1"x1" squares remove from pan and place on a wax paper coated cookie sheet, stick lollipop stick into each square and then stick them in the freezer for 1-2 hours until hardened.
6. melt dark chocolate in the microwave or over the stove then dip each stick into the chocolate, you could dip them in a topping to if you like, I tried sprinkles or coconut but i liked the look better plain. Stick them back in the freezer until 2-3 hours before serving then place them in the refrigerator.
The other night I was having cookie and brownie cravings so I decided to try to make something that combined them both, with my brothers help =) they weren't all that attractive, but I thought they were really good, but I never got a decent picture, well I thought I did but I can't seem to find it well anyway:
Brownie cookie swirl bars
Brownies:From CHocolate and baking
1/2 cup butter
3/4 cup sugar
1/2 cup brown sugar
41/2 oz dark chocolate
1T corn syrup
2 eggs
1t vanilla
3/4 cup flour
2T coco
1/2 t baking powder
Cookie dough:
1/2 recipe from the back of the chocolate chip thing, thats the only one we ever use and I don't have it handy.
1. lightly grease and flour a 8x8 pan and preheat oven to 350
2. place butter, sugars, dark chocolate and corn syrup in medium saucepan and heat gently, stirring until the mixture is well blended and smooth. Remove from heat and cool.
3. Beat together eggs and vanilla, beat in the chocolate mixture(make sure it is well cooled to avoid cooking your eggs)
4. sift together the flour, coco, and baking powder then gently fold into chocolate mixture using spatula.
5. Spoon into prepared pan and bake for 10 minutes, remove from oven and immediately spoon dough over it, covering as much area as you can.
6. Place back in oven and cook 20 more minutes, remove, cool and cut into bars =)
