Dinner for 1



I love just hanging out and cooking for just myself... I don't really care if I mess it up, because if I hate it I only have to answer to myself, I don't have to pretend I like it or wonder if other people are, I just eat it.


Two posts in one day... crazy huh? but I knew if I didn't get this up today then I might never get to because I would definately forget the recipe, so here goes.


Classic Warm Bruchetta


3 large cloves garlic

1T olive oil

4 mixed green onions- the onion part not the green part

8-12 cherry tomatoes( depends on size, you want about a handful)

4 sundried tomatoes

4 large leaves sweet basil

4 leaves thai basil

1 stem oregano

2 t black pepper

1 pinch salt

2 slices good bread, toasted(I used garlic bread from Costco)


Slice your garlic into coins and heat with olive oil in small skillet

Slice green onions, cherry tomatoes, sundried tomatoes, and herbs, place in bowl and toss together with salt and pepper

Add to skillet and cook over low heat for 5-7 minutes until onions have lost their bitterness but still have a little bite

Spoon mixture over toasted bread and enjoy!

Serves a generous one


I was thinking while I cleaned up about how I was going to post this recipe, I mean there are tons of ways to do this. when I was brainstorming what I would add I thought I would use a plain yellow onion, but I found the green onions instead and they needed to be used up, the thai basil could easily be substituted for one more leaf of basil, if you are a big oregano fan or want a more italian flavor add some more, the possibilities are endless =)
and here is why I won't be getting one of those lovely anthropologie aprons-
1. I already have and love this one(bad picture- but it says pastry pixie)
2. See the lovely wrinkles- thats because if I'm actually doing something worth getting it out- I'm tire afterwards and I just wad it up and stick it in the drawer
3. You can't see this either but it has lovely chocolate, cake batter and whatever else stains all over it
